Dr. Lunsford, inspired by her Alma mater, Tuskegee University, is setting the tone for the upcoming generation of urban agriculturalists. Currently working as a Sustainable Food System Resource Specialist through Tuskegee University’s Carver Integrative Sustainability Center, Ms. Lunsford’s work focuses on food justice and community sovereignty. She recently defended her PhD thesis on “Soul Food as Healing: A Restoring of African American Food Systems and Foodways”. In this interview Dr. Lunsford speaks about the history of American "Soul Food", heart disease, the effect corona virus has had on food systems, cancellations of spring college graduations, and her skills gained while attending Tuskegee University.
