Pat, a Mac user, says ... You mentioned the first way - Quit. Option-click on the desktop will hide InDesign and you leave the program but not quit it. Force Quit - Option+Command+esc Command+H - will hide InDesign. Which surprised me the first time it happened because Command+H used to Hide Frame Edges.
